zippy.

For dinner tonight, I made Zippy Orange BBQ Chicken Packets. OK, not great.


INGREDIENTS
1 teaspoon of butter
2 cups shredded deli rotisserie chicken
1/2 cup barbecue sauce
3 tablespoons frozen (thawed) orange juice concentrate
1 tablespoon honey
2 medium green onions, chopped
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
1/2 cup shredded Cheddar cheese (2 oz)

DIRECTIONS
  1. In 1-quart saucepan, melt butter over medium heat. Stir in chicken, barbecue sauce, orange juice concentrate and honey. Remove from the heat; stir in green onions. Set aside.
  2. Separate dough into 4 rectangles; press perforations to seal. Spoon 1/2 cup chicken mixture onto half of each rectangle; sprinkle with cheese. Fold dough over filling; press edges with fork to seal.
  3. Place on ungreased cookie sheet. Bake at 375°F, 15 to 20 minutes or until golden brown. 
I doubled the recipe. The orange flavor with BBQ flavor is an interesting combination. This one's probably not making my list of things I'll make again. Also, it was really hard to keep the crescent rolls together; I could hardly fit any filling into each one without it overflowing out the sides. It certainly wasn't a "pretty" meal.

After dinner, Nate and I went to Anne and Sam's to watch the K-State v. Nebraska football game. Nebraska dominated, beating Kansas State 48-13. During halftime, we watched the newest episode of The Office. Tomorrow afternoon, Dad and Karen arrive in Nashville. I'm excited to see them and for them to meet Nate!
